BOH caught up with Zach Elkin, general manager of Signature Kitchen Suite, to discuss the inspiration behind the brand’s latest innovation, which features their patented sous vide technology in a more petite range.
What’s the inspiration behind the new collection?
At Signature Kitchen Suite, we’re all about being true to food. Think about the journey food takes to the plate: The soil and the sea, the plant and the animal, the farmer, fisherman, butcher and baker all play their part and each deserve the utmost respect. The last portion of the path to your table calls for the same consideration. Better cooking is possible through better thinking.
What was the starting point for this collection?
Signature Kitchen Suite made a name for itself in the luxury home appliance space [in 2018] with the introduction of the industry-first, 48-inch dual-fuel pro range with sous vide, arguably the most versatile pro-range on the market. This flagship range brought our brand mission to life with an appliance that does it all with sous vide, gas and induction right on the cooktop—something that had never been done before.
The sous vide cooking technique has been the go-to method of the world's best restaurants for years. It uses precise temperature control to slow-cook vacuum-sealed food in a water bath, delivering the perfect doneness, edge-to-edge, every time. Sous vide on the rangetop delivers precise temperature control within one degree of setpoint without the need for a circulator, thanks to a hermetically sealed lid, which helps to preserve minerals, vitamins and nutrients without additional fats or salts.
What piece are you most excited to unveil?
Definitely our new 36-inch dual fuel pro range, which packs all the power of our 48-inch dual-fuel pro range into a smaller footprint. It is complemented by a 36-inch hood that is engineered to be installed without the need for a separate make-up air system, as the range stays under 39,000 BTUs, making this ideal for installations in urban homes or luxury high-rise buildings. Complete with sous vide, induction and two gas burners on the same cooktop, this range is designed to help home chefs achieve professional-level results.
How do you feel this collection push the brand forward?
Our entire collection delivers the right mix of innovation, high precision and outstanding design for their most culinary-obsessed, tech-savvy clients. The latest launch of our expanded portfolio includes new pro rangetops and wall ovens featuring the innovation we’re known for—sous vide technology—along with a new induction cooktop and microwave oven drawer available later this season.
